Method
Preparation
- Prepare whole wheat dough by adding salt and water. Make a smooth and firm dough. Close it with lid and keep the dough aside for 30 min.
- While, the dough is setting, chop the onion, tomato and capsicum. And also cook the corn if you are using fresh/frozen corn.
- Grate the cheese and keep them ready.
Rolling and Stuffing
- Make two medium sized roti balls.
- Here comes the most delighting part. You can give any shape to you pizza like heart, square or disc. I prepared 2 heart shaped and two disc shaped parazza.
- Now we'll see how to make shape. Dust the balls with wheat flour and roll it to make flat roti (neither too thin nor thick). Cut with knife to give a desired pattern. Once you prepare the shape make that as base to prepare other patterned rotis to get an uniform shape.
- Now on one of the heart shaped roti, apply a generous layer of home made Pizza sauce.
- Make another layer with grated mozzarella cheese. Arrange onion, tomato and capsicum as third layer.
- Now Place another heart dought over it. Seal the edges and make sure the veggies won't spill while flipping the paratha. For the final finishing, gently press the edges with the fork. Now the Parazza is ready for cooking. See the picture below
Cooking Pizza Paratha/Parraza
- Heat the iron tawa to medium heat. To check, just sprinkle water and it should splutter. Now the tawa is ready.
- Place the stuffed paratha on tawa. Pour a spoon of olive oil around the edges. Close it with a lid and cook for some time.
- Then slowly flip the paratha to other side. and allow it to cook. Press the edges nicely for a even cooking.
- Flip and cook until the roti color changes and you can see some spots over them.
- Now we are going to load one of the side with more cheese and vegetables. Make sure that the roti is hot enough to melt the cheese. Load with cheese, be generous to make a perfect parazza.
- Once again arrange the finely chopped veggies over it. I had put cooked sweet corn, capsicum and cheery tomato. And also crushed dry herbs.
- Wait until the cheese melts completely and remove it from hot plate and serve immediately.
- This tastes at its best when served hot.
- Disc pizza-Same procedure as you have seen before. Make a round normal one load it with Pizza Sauce, cheese and veggies.
- Make another one and flip it over the stuffing. Seal the edges.
- Once the roti cooked nicely, do topping part.
- I used pieces of pineapple for topping as my husband likes them in pizza.
- Check my Homemade Pizza Sauce.
- You can use any vegetable of your choice. You can also include olives and jalapenos to make it more pizza like.
- Use only thick bottomed iron tawa. I would not suggest nonstick as it might get hot quickly and there is chance of burning the paratha.
- Use only olive oil.
- If you feel making shapes difficult on roti, draw the desired shape on a paper and cut it. Then use that as base to prepare your roti shapes. Which makes the job easy and also make the parazza uniform in shape.
- If you do not have mixed herbs, do not worry, use only oregano.
